| AMY1

Amylase Alpha 1, Salivary (sAA1) is an isoenzyme of amylase produced by the salivary glands. Amylase is a secreted protein that hydrolyzes the 1, 4-alpha-glucoside bond in oligosaccharides and polysaccharides, thus catalyzing the first step in digesting starch and glycogen in food. There is a cluster of several amylase genes in the genome that are expressed at high levels in the salivary glands or pancreas.

| Recovery

The recovery of Rat AMY1 spiked at three different levels in samples throughout the range of the assay was evaluated in various matrices.
